DUTIES AND RESPONSIBILITIES:

ESSENTIAL FUNCTIONS:

• Run the day-to-day operation of the station in the kitchen for the grill, room service, cafeteria and banquets.
• Assist Executive Chef in creating and preparing special daily.
• Check and complete mise en place and pars and set up station (using proper recipes and only fresh quality is accepted).
• Communicate with Souse Chef, Executive Sous Chef regarding menu items, problems situations or shortages.
• Read correctly all dupes that come in.
• Always try to accommodate any and all guest request making sure the sous chef helps make the decision if it is possible to make it happen that day or if it needs to be prepared for the next day.
• Use standard recipes and plate presentations in order to maintain standards of quality in production and presentation.
• Be aware of items that we are running out of and write it down.
• Maintain a good working relationship with all Amangiri staff, management and guests.
• Store all items properly at the end of shift, labeling and dating all products.
• Ensure clean, neat and organized work area.
• Ensure proper communication between am / pm.
• The cafeteria is all our responsibilities and if items are not correct or not clean it is your responsibility to fix.
• Conduct oneself in a professional manner at all times to reflect the high standards of Aman resorts and encourage other staff to do the same.
• Make sure front kitchen is cleaned down and drawers empty and ready for the next shift.
• Perform other task or projects as assigned by management.
• Have a flexible schedule and must work holidays.
• Clean and organize and label your shift mise en place cart.
• Adhere to all guidelines in the employee handbook.
• Perform other task or projects as assigned by hotel management.
• Conduct yourself in a professional manner at all times to reflect the high standards of Aman resorts and encourage other staff to do the same.

QUALIFICATIONS:

• Must have culinary degree and/or equivalent experience.
• Must have practical experience working in a kitchen.
