In 2020, amidst the global pandemic, the brand opened in the Magic City’s Wynwood Arts District and opened up FREEHOLD MIAMI with resounding success. With its eyes on Manhattan, Freehold Hospitality opened FREEHOLD IN THE PARK within a 100 year old historic landmarked pavilion right in the heart of Union Square for the summer 2021 and 2022 season. Now, Freehold Hospitality is expanding to midtown Manhattan with its newest concept: FREEHOLD ROOFTOP. Whether holding a business meeting or joining friends for great food and drinks, FREEHOLD is the public assembly space for all, where dancing is encouraged and sleeping is prohibited.
Currently we are looking for a EXECUTIVE CHEF to join our team in Manhattan, New York, preferably with hotel experience. We are looking for team players.
The Executive Chef position is responsible for all food production in then hotel, including that which is used for the rooftop, lobby bar and tavern, as well as any event bookings. Develops menus, food purchase specifications and recipes. Supervises staff and liaisons between upper level management and ownership. Maintains highest professional food quality and sanitation standards.
RESPONSIBILITIES:
- Works in tandem with Sous Chefs to execute all of the below
- Schedules and coordinates the work of cooks and other kitchen employees.
- Approves the requisition of products and other necessary food supplies. All food cost relevant orders will need to be ordered and costed through the POS and Avero system.
- Ensures that high standards of sanitation, cleanliness and safety are maintained throughout all kitchen areas at all times.
- Establishes controls to minimize food and supply waste and theft.
- Plan, prep, set up and provide quality service in all areas of food production for menu items and specials in the designated outlets in accordance with standards and plating guide specifications.
- Direct, train and monitor performance of kitchen and back of house staff.
- Schedule through Schedulefly, monitor payroll expense and budget.
- Maintain organization, cleanliness and sanitation of work areas and equipment.
- Ensure all employees attend daily line-ups and that standards and procedures are followed at all times.
- Develops standard recipes and techniques for food preparation and presentation which help to assure consistent high quality and to minimize food costs; exercises portion control for all items served and assists in establishing menu selling prices. The presentation will be formatted by the Freehold brand team in coordination with General Manager and maintained in Google Slides.
Plans menus for all food outlets in the establishment, including café as well as any off site pops with the Freehold named attached
- Work with the Event Manager to plan event menus
o Coordinate and confirm BEO’s
o Assure kitchen staff is vested on all events and run of shows
o Create specialty menus as needed
o Update and create private booking menus
- Cooks or directly supervises the cooking of items that require skillful preparation.
- Interacts with food and beverage management to assure that food production consistently exceeds the expectations of members and guests.
- Evaluates products to assure that quality, price and related goods are consistently met.
- Establishes and maintains a regular cleaning and maintenance schedule for all kitchen areas and equipment.
PHYSICAL REQUIREMENTS:
- Ability to safely and successfully perform the essential job functions consistent with the ADA, FMLA and other federal, state and local standards, including meeting qualitative and/or quantitative productivity standards.
- Ability to maintain regular, punctual attendance consistent with the ADA, FMLA and other federal, state and local standards
- Must be able to lift and carry up to 50 lbs
- Be able to work in a standing position for long periods of time.
This position pays $80,000 per year.
