Basic Purpose

The Director of Outlets is responsible for but not limited to overseeing all operational aspects of the Food & Beverage outlets of the hotel including preparation, service staff, administration and profitability. The Director of Outlets is responsible for hiring, training, coaching & counseling, performance, reviews, disciplining & termination of employment. The Director of Outlets will maintain a high standard of quality with regards to guest & employee satisfaction and is responsible for meeting the objectives and standards set forth by Gurney’s Montauk.

Essential Functions

• Actively running the floor operations as a hands-on leader

• Responsible for the performance of the outlets which include personal management, F&B along with other services and operations

• Oversee all outlets and staff during service to ensure excellent service is achieved (Scarpetta Beach, Scarpetta Bar, Tillies, Corso, Firepit)

• Responsible for performance & sales of the department & to ensure that the company’s profit & goals are met

• Encourage and build mutual trust, respect and cooperation among team members and to make sure that the staff is comfortable approaching management and encourage feedback from staff

• Focus on safety & health standards to ensure the team has a good knowledge of safe working conditions

• Identify the development needs of the department & team and share those needs with the Director of F&B

• Identify plans to improve team members knowledge & skills

• Review standards for all areas and ensure all staff understands their role & expectations in full and are well trained and prepared to serve guests

• Maintain complete knowledge of departments and schedules at all times

• Review reservations & seat count, all outlet schedules and all BEO’s to ensure staffing is adequate for all areas

Qualifications and Education Requirements

• 4 Years or more of progressive hotel F&B management experience
• Service oriented style with professional presentations skills
• Demonstrated ability to effectively interact with people
• Experience in implementing new food & beverage concepts
