Flat Rock Village Bakery is a bakery/cafe specializing in organic brick oven breads/pastries, wood-fired pizzas, sandwiches, and salads. We are a scratch bakery, using organic flours, and sourcing other ingredients from local and organic suppliers. We are looking for an individual with bakery experience working with artisan breads.

This is a hands on baking position for which we need an individual to do our morning bread and pastry bake. The shift starts at 2:30 am. We need someone who is extremely responsible and who has a passion for baking. This is an opportunity to work in one of the premier bakeries in the Southeast, baking the best bread and pastries in the region. It is also an opportunity to work with a brick-oven, and to bake breads with a traditional and challenging method.

Responsibilities and Duties

-Working a 8' by 6' brick oven to bake all the days hearth breads. This includes cleaning and prepping the oven for baking. Proofing all of the breads to the point when they are ready for the oven. Loading and unloading the oven using wooden peels.

-Baking all of our naturally leavened, sourdough breads.

-Baking our ciabatta and focaccia, and our daily sourdough sandwich breads.

-Baking all the days breakfast pastry in the convection oven. Including chocolate, almond, ham and cheese, butter, and savory croissants. Sticky buns, fresh fruit Danish, cinnamon swirls, Kouign-amann, cardamom buns. Mixing and baking our daily scones. Boiling and baking our handmade bagels.

-Some dough mixing/shaping may be required at the end of the shift on certain days.

Qualifications and Skills

Baking experience is preferred and preferably some experience working with naturally leavened breads. Willing to train a person with baking experience who is passionate about the craft of baking and who wants to develop their skills.

Pay is based on experience.

Pay: $17.00 - $21.00 per hour
