Job Summary: Properly cleans and sanitizes all dishes, glassware, utensils and pots. Responsible for maintaining the dish room area, floors and the dish machine in a clean and sanitary condition. Assists with the cleaning of other areas of the restaurant as requested.

Essential Functions and Responsibilities:

Operates dish machines to company and manufacturer specifications.

• Uses proper measurements of detergent and sanitizer in the dish machine and the pot washing sinks.
• Adds salt to the water softener as needed.
• Restocks all dishes, glassware, utensils, pots, and pans.
• Removes garbage, cardboard boxes, cleans and sanitizes garbage cans as needed.
• Breaks down, cleans, and sanitizes the dish machine at the end of a shift.
• Keeps dish and other storage areas clean and organized.
• Performs additional responsibilities, although not detailed, as requested by the Chef or Sous Chef

Other Functions and Responsibilities:

• Other duties as requested or assigned.

Working Conditions:

• This position will spend 100% of the time standing.
• Occasional environmental exposures to cold, heat, and water.
• Educational, Physical, and Other Requirements:
• The individual must be able to transport up to 50 pounds on occasion and up to 35 pounds
• on a regular basis.
• Physical requirements may include frequent use of hands to finger, handle, or feel objects, tools or controls; reach with hands and arms; talk or hear. The employee may be required to lift, stand; walk; sit; climb or balance; stoop; kneel; crouch or crawl; and smell.
